What is a shrub drink?

A shrub is a drink built on three things: fruit, vinegar, and water. Ripe fruit is steeped in vinegar until the vinegar takes on its color and flavor, then that concentrate is mixed with still or sparkling water and served cold. That's the whole idea, and it has barely changed in three hundred years.

The name comes from the Arabic sharāb, which simply means "a drink." It traveled into English through trade routes and colonial kitchens, and for most of its life a shrub was less a cocktail than a pantry staple , the practical answer to a harvest that would otherwise spoil.

What vinegar actually does

Acid sharpens flavor. A spoonful of fruit vinegar in sparkling water tastes brighter and more specific than the same fruit in syrup, because the acid cuts through the sugar-forward notes and leaves the aromatic ones standing. It's the same reason a squeeze of lemon rescues a flat dish.

It also changes how a drink finishes. Sweet sodas coat the mouth and leave you thirstier than when you started. A vinegar-based drink finishes clean and dry, which is why a shrub can be sipped through a long afternoon without fatigue.

What it tastes like

Not like salad dressing. Fruit balsamic vinegars are aged and rounded, closer to a tart wine than a pickling brine. In a finished shrub you notice the fruit first, then a lift of acidity at the back, then nothing , no syrupy residue.
