A shrub, made simple

A shrub is one of the oldest ways to flavor a glass of water: fruit steeped with vinegar, then topped with something cold and fizzy. Cooks kept it because vinegar holds fruit through the season, and drinkers kept it because the acid makes fruit taste more like itself. Aceterra is balsamic vinegar sparkling water built on that idea, canned so there's nothing to stir.

Vinegar begins as wine. Bacteria turn its alcohol into acetic acid, which is where the brightness comes from and why a spoonful of balsamic can carry a whole glass. Aceterra uses aged balsamic rather than syrup, so the sweetness on the finish belongs to the fruit.
